Quinoa and Rice Pilaf

Yields: 2 cups - 8 (1/2 c.) servings per recipe



  1. Heat olive oil in a medium saute pan, and cook the shallots, garlic, and bell pepper for approximately 5 minutes, or until tender.
  2. In a bowl, combine the cooked rice and quinoa.
  3. Add the shallot mixture, salt, pepper, and parsley.
  4. Stir until well combined.
